Fermentation is the ideal food preservation method - richest in flavour, highest in nutritional value, simple to make, and requires no special equipment. Come and learn hands-on the basics of fermentation - and find out for yourself!
Part 1: Food Preservation Overview (about 30 minutes)
An overview of main preservation methods - pros and cons, the principles behind them, and what makes fermentation stand out.
In this part you'll get a better grasp of what causes food to spoil and what makes it preserved - beyond just following recipes.
We’ll also have samples of different homemade products for you to taste, using different food preservation techniques.
Part 2: Fermentation - Hands On (about 2.5 hours)
Together we’ll make, step by step, two different ferments: kimchi and brined vegetables with fresh herbs.
At the end of the workshop you’ll take with you 2 jars of “living product", as well as guidance how to complete the fermentation process at home.
You’ll also get recipes that will allow you to continue exploring the world of fermentation.
The workshop is held by Alon Shochat, a chef with over 15 years of culinary experience, including farm-to-table and food preservation.
